Homemade Chocolate Covered Espresso Beans

Need a stocking stuffer?  Here's a quick and easy recipe for Chocolate Covered Espresso Beans

1/2 c chocolate chips or if you like a darker fancier chocolate,  you may try a Ghirardelli bar
1/3 c roasted coffee beans (fresh is best and yes any type of bean will do)

Melt chocolate in a double broiler.  Stir in 1/2 of the coffee beans, cover w/ chocolate, then remove and place on wax paper.  Keep beans separate.  Pour in the rest of the beans.  Allow to cool and harden overnight or you can put them in the freezer for an hour.  Remove and store in airtight container.
